It provides adequate daily requirements of pyridoxine (vitamin B6), thiamin (vitamin B1), riboflavin, folates, pantothenic acid and niacin. These vitamins mediate various metabolic functions in the body. Elubo is made from yams that have been peeled, sliced, cleaned, dried and then blended into a flour. It is processed from carefully sourced African Yams and the end product, the flour is used to make the Nigerian staple - Amala - popular with the Yoruba people of Western Nigeria. This flour is packed with fiber and has less calories than other staple flours. When cooked to instructions, Amala can be easily prepared and this dark flour will be light and fluffy and will pair deliciously with hearty West African soups or stews of your choice such as Egusi, Ewedu, Ogbono soup, Efo Riro, etc. It is widely eaten in all parts of Nigeria but prominently served in Western part of Nigeria.
