It is a mixture of boiled down oyster juices (which have caramelized), along with salt and sugar with cornstarch, and like most flavouring agents, it should not be added to the food at the early stages of cooking, but only towards the end and it should not be used liberally. Ideally suited to stirfry and quick braised dishes, it can also be used as a part of salad dressings, or in Western Style dishes such as stews, casseroles and pies.
